Master Class Line Up
Monday 11th November – Pierre Koffmann NOW SOLD OUT
Pierre Koffmann is an internationally acclaimed chef who has contributed to Britain’s finest cuisine for almost forty years.
La Tante Claire, his now legendary restaurant, gave Pierre Koffmann the platform to achieve three Michelin stars.
Between 1977 and 2004, La Tante Claire set new standards for cooking while also becoming a training ground for some culinary superstars such as Tom Aikens and Bruno Loubet.
Pierre came out of retirement to return to The Berkeley Hotel, this time embracing a more informal, Gascon style.
Koffmann’s at the Berkeley is now established as a relaxed brasserie in the heart of Knightsbridge offering classic provincial French cooking based on Pierre’s first memories of the food from his mother’s and grandmother’s kitchens.
Nathan and Pierre met when they both were asked to cook to raise funds for Action Against Hunger as part of the Hawksmoor ‘Dream Team’ in London 2012. Nathan has long admired Pierre’s cooking and ethos on food, and on many occasions has visited Koffmann’s at the Berkley Hotel. Find out more about Pierre here

Friday 6th December – Henry Harris & Mitch Tonks - ”A Surf & Turf affair” Tickets Still Available
Legendary chefs Henry Harris and Mitch Tonks will be joining Nathan for a one-off ‘Surf and Turf’ Master Class evening full of fun, frolics and fantastic produce. As part of our Master Class season, we will be feeling especially joyful this weekend with the Padstow Christmas Festival, a great excuse for an exciting gastronomic evening. For this special event, fish and meat, together at last, will be showcased through a unique menu, formed through the chef-collaboration of Henry, Mitch and Nathan.
Henry Harris, patron-chef of Racine in Knightsbridge is our neighbour to Outlaw’s at the Capital in London. Nathan first met Henry when visiting Racine for drinks after visiting the Prime Minister at No.10 Downing Street in 2012! Find out more about Henry here
For the third chef-musketeer, we are delighted to welcome Mitch Tonks back by popular demand after his Master Class with Nathan in 2011. Having met in 2009 at the Dorset Food Festival, Nathan and Mitch remain like-minded in their support of sensational British seafood and fishmongery. Find out more about Mitch here
Henry, Mitch and Nathan all have a passion for letting flavours shine through in their cooking with a fierce respect for seasonality and quality produce. This Master Class will involve the alliance of all three chefs with live demonstrations, lots of merriment and, of course, an exquisite 6 course Surf and Turf menu: a must for any passionate foodie.
Monday 9th December – Ashley Palmer-Watts – Tickets Still Available
Nathan and Ashley first met when Ashley dined at Nathan’s first restaurant The Black Pig, in Rock, back in 2004. Nathan has since eaten at The Fat Duck and Dinner by Heston Blumenthal, and was thrilled when Ashley agreed to join him for what will surely be an exciting evening!
Ashley joined Heston Blumenthal at The Fat Duck in Bray in 1999 when it had just received its first star. Within two years, he was promoted to Sous Chef and he became Head Chef in 2003. Since 2008, he has been the Executive Head Chef for the Fat Duck group. Ashley currently heads up the kitchen at Dinner by Heston Blumenthal at the Mandarin Oriental, Hyde Park.
His creative eye for detail coupled with a great enthusiasm for research and British ingredients have enabled him to create the unique menu of historically inspired British dishes with Heston Blumenthal for the new restaurant. He continues to oversee development at The Fat Duck, The Hinds Head and The Crown Pub in Bray.
