Chris – Head Chef, Restaurant Nathan Outlaw

Born in Burnley, Lancashire. He attended Nelson & Colne College in Borrowford where he studied for his NVQ levels 1 and 2. Throughout his career Chris has accumulated a wealth of cooking experience. He began at Northcote Manor but then flew the nest completely heading to Australia. He then returned to the Devonshire Arms with Steve Williams and then moved onto the Vineyard in Newbury where Nathan was Head Chef. Chris then joined Nathan at The Black Pig in Rock as his Sous Chef. He has also worked at Anthony’s in Leeds, with Martin Wishart in Edinburgh, once again by Nathan’s side at the Marina Hotel in Fowey, at The Ivy in the Netherlands, coming full circle joining Nathan at Restaurant Nathan Outlaw. Nathan says about Chris, “Chris has always been a loyal and dedicated part of my team. Without him and his influence in our kitchens the standard would most certainly not be the same. He is a special talent and I am proud to cook alongside him once again”. When Chris isn’t creating magic in the kitchen he enjoys swimming, fishing and eating out in amazing restaurants. His life ambition is to run his own restaurant.

TimChef, Restaurant Nathan Outlaw

Born in Oldham, Tim worked in bars up until June 2010 and then a friend encouraged him to come to Cornwall to work in Outlaws in Rock where he showed potential. In September, 2010 he joined Nathan Outlaw’s apprenticeship scheme and spent 2 months in each kitchen learning and developing his skills, now fine-tuning in the Restaurant Nathan Outlaw kitchen. Nathan says “Tim has gone from strength to strength since starting with us. He can confidently cook all types of fish and seafood to our high standard. It is a pleasure to have him with us.” When Tim isn’t working he heads down to Polzeath where he is learning to surf. He says his passion in life is simply “life itself”.

Dean – Chef, Restaurant Nathan Outlaw

Dean was born in Looe, Cornwall and has worked in the hospitality trade for the last 6 years. He attended Cornwall College where he passed his NVRQ level 2 in catering. He joined the Nathan Outlaw Restaurants team in 2011 and now enjoys working full time in Nathan’s kitchen with the ‘awesome team’. Dean says he has learned a huge amount coming from a family run pub to a 2 Michelin starred kitchen. He is now Nathan’s young pastry chef and helps to prepare the amazing desserts for the RNO diners. Nathan says, “Dean is a loyal and dedicated young Cornishman who has a real passion for all we do.” On free days Dean enjoys all outdoor sports especially game shooting. He is also a ‘bit of a mover’ and loves to dance the night away at weekends. Dean’s ambition for the future is to run his own intimate restaurant in Looe where he grew up.

GeorgieApprentice Chef, Nathan Outlaw Restaurants Ltd.

Born in London, Georgie moved to Cornwall in 2007. As both her parents are chefs Georgie’s destiny was always to be in a kitchen. She started cooking at home with her mum when she was 11 and began an apprenticeship whilst still at school aged 14. She became a highly valued member of the Outlaw’s team in 2011, embracing the opportunites offered to her by completing stages at Angela Hartnett’s ‘Murano’, Heston Blumenthal’s ‘Dinner’, Phil Howard’s ‘The Square’ and with Marcus Waring at ‘The Berkeley’. Quite an accomplishment for one so young. Nathan describes Georgie as, “committed, strong and certainly one to watch” On her days off she enjoys family time and surfing when the weather is good. Her life ambition is to be the star of the future in the cooking world.

Danny“The man who can do everything”, Nathan Outlaw Restaurants Ltd.

Born in Maidstone, Danny met Nathan at school and they have been good friends ever since. He worked at Rick Stein’s Seafood Restaurant prepping fish when Nathan was Sous Chef there. Danny joined Outlaw’s team in 2009 and now works full time for Nathan doing an excellent job tending the new Kitchen Garden in Porthilly. He has also been in the building trade so has many useful skills that go a long way to keeping everything up and running in the kitchens at the St Enodoc Hotel. Nathan’s description of Danny is ‘No job too big, no job too small; if a job needs doing, Danny gets it done!’ Danny’s passions in life are fishing and shooting. His life ambition is to simply enjoy it!

StephiRestaurant Manager, Restaurant Nathan Outlaw

Born in Germany, Stephi has a Diploma in Hotel Management and a wealth of experience.  Her career began in a 2 Michelin starred restaurant in the Black Forest in Germany.  She then went to Namibia where she opened the first “Relais & Chateaux” hotel.  With her husband, Damon, she managed a lodge in Botswana and built and ran a lodge in South Africa. She came to Cornwall in 2008 to work for Nathan in Fowey and is now fulfilling one of her goals, to manage Nathan’s 2 starred Michelin restaurant at the St Enodoc Hotel in Rock.  Nathan says, ‘Stephi is hospitality at its best.  She always puts a smile on your face’. Her passions are eating amazing food and kayaking.  Her life ambition is to stay healthy and happy.

DamonBeverage Manager, Nathan Outlaw Restaurants Ltd.

Born in South Africa, Damon studied for a Diploma in International Hotel Management before going to Namibia to work in safari lodges as a food and beverage manager. He met his wife, Stephi, whilst working on the Skeleton Coast.  Together they went to work in Botswana and then onto SA where they built and ran their own lodge. They both came to Cornwall to work for Nathan in Fowey in 2008 and the journey with Nathan continues in Rock. Nathan says, ‘Damon is an encyclopaedia of knowledge when it comes to all things beverage!’  Damon’s passions are wine, walking, wildlife and kayaking. His life ambitions are to make his own wine and to increase his property portfolio.

CharlotteAssistant Manager, Restaurant Nathan Outlaw

Born in Lancashire, Charlotte has worked in the hospitality industry for 9 years, starting in Wiltshire and becoming Events Manager at The Rectory Hotel.  She gained a first class Degree in Hospitality Management in Plymouth where she also worked at Tanners Restaurant.  Charlotte moved to Cornwall in 2010 to join the team at Restaurant Nathan Outlaw.  Nathan describes Charlotte as ‘calm, quietly confident and gracious’. Her passions are eating out, product design and anything remotely hotel and restaurant orientated, with a desire to provide a rich and memorable guest experience. Her life ambition is to design, own and run an intimate hotel.

Julia – Front of House, Restaurant Nathan Outlaw

JuliaBorn in Brandenburg, Germany. Julia was destined to become part of the hospitality industry as her dad was a chef and her mum ran her own restaurant. From the age of 15 she worked for her mum, where her love of food eventually led her to training to become a chef, with a passion for cake baking. She worked for Anton Eldermann in Great Hallingbury and for Luke Fishpool for 3 years at the ‘Lemon Tree’. She then moved into a front-of-house role where she flourished, subsequently joining Nathan Outlaw’s elite team in the Fine Dining. Nathan describes Julia as, “a real pleasure to have in the team. She has a very good sense of humour and really gets stuck in every day”. She has a great desire to live by the coast where she can enjoy the sea so when she’s not working Julia enjoys photography and learning to surf at Polzeath beach.

 

KarenCompany PA, Nathan Outlaw Restaurants Ltd.

Born in Launceston, Cornwall. Karen attended Falmouth School of Art & Portsmouth University, gaining a BEd Hons Degree in Education and Creative Arts. After working in Germany, she left on a three year adventure in search of freedom, fun, scenery and culture. On her return to the UK she built a successful Marketing Business, focusing on delivering outstanding customer service. In 2007, Karen relocated to Libya but Cornwall beckoned and when she returned in February 2011 she jumped at the chance to work with Nathan and the ‘Outlaw’ team. Her interests are all things coastal, seeking out delicious food and wine, scenic walking and photography. Nathan describes Karen as, “loyal, organised and a real backbone of the company” Her life ambition is to enjoy life every day.

SharonPA to Nathan, Nathan Outlaw Restaurants Ltd.

Sharon began her working life front of house at The Royal Star Hotel in Maidstone, Kent. Once her children were at school, she returned to study at the University of Kent, Canterbury where she gained a BA Honours degree in Comparative Literature and Linguistics. Having worked for a number of years with young people through the Kent Youth Service, Sharon decided to enter the teaching profession where she taught English at secondary school level, often preferring to take on the more challenging students. In July, 2011, she made the decision to leave the profession and come on board as Nathan’s personal assistant. In her spare time, Sharon likes to cook, read, spend time with her grandchildren and watch the birds in her garden. She loves the rugged North Cornwall coastline and Bodmin Moor. Sharon is a ‘virtual vegetarian’ and doesn’t eat fish which is a little odd as she is also Nathan’s mum!

Rachel – Finance Manager, Nathan Outlaw Restaurants Ltd.

Born in Padstow – Rachel met Nathan when they were both working for Rick Stein at the Seafood Restaurant in 1998. Rachel says it was love at first sight as she shouted at him because she needed mustard for a customer! Being married to Nathan has meant that her journey has been supporting him in reaching his goals and bringing up their two children. Nathan says, “Rachel’s background in hospitality gives her a great understanding of our business – she the master of multi-tasking!” When she is not working Rachel enjoys reading and relaxing walking their dog, Bud. Rachel life ambition is to be happy and healthy.
