Pete – Head Chef, The Seafood & Grill Restaurant
Born in High Wycombe, Pete first met Nathan in 2002 at The Vineyard in Newbury, where Nathan was Head Chef. Pete has a wealth of experience having worked at Anthony’s in Leeds, The Black Pig in Rock and The Square, Hibiscus and Vanilla in London. In 2009, Pete made the move to Cornwall to become Head Chef for Nathan at The Seafood & Grill Restaurant at the St Enodoc Hotel. Having known Pete for many years, Nathan identified him as being a strong, committed and organised chef. His passions in life are cooking amazing food, fish and football. Pete’s life ambition is to keep enjoying cooking.
Redas – Sous chef, The Seafood & Grill Restaurant
Born in Lithuania, Redas originally trained as an engineer. He came to Cornwall in 2005 where he started his career as a commis chef. He attended Cornwall College in 2006 where he focussed on becoming an excellent cook and refining his skills. Nathan described Redas as loyal, hardworking and always up for a challenge. His passion is photography. His life’s ambition is to run his own restaurant.
Simon – Apprentice chef , Nathan Outlaw Restaurants Ltd.
Born in Truro, Simon started working in kitchens when he was 14 and he quickly became hooked. He is studying catering at Cornwall College and first came to work at the Seafood & Grill in 2010 for a week’s work experience. Pete, the Head Chef, recognised Simon’s potential and enrolled him as a new recruit on Nathan Outlaw’s Apprenticeship Scheme. Since then, Simon has definitely made an impression on Nathan, who said of him, “Simon is a naturally gifted cook”. His passions in life are football and cooking. His life’s ambition is to keep on enjoying cooking and to run his own restaurant one day, when he is much older and wiser!
Tim – Apprentice chef , Nathan Outlaw Restaurants Ltd.
Born in Oldham, Tim worked in bars up until June 2010 and then a friend encouraged him to come to Cornwall to work in The Seafood & Grill Restaurant where he showed potential. In September, 2010 he joined Nathan Outlaw’s apprenticeship scheme so now spends 2 months in each kitchen learning & developing his skills, in preparation for starting Cornwall College in 2012. Nathan says “Tim is a natural baker with a fine touch.” When Tim isn’t working he heads down to Polzeath where he is learning to surf. He says his passion in life is simply “life itself”.
Dennis – Apprentice chef, Nathan Outlaw Restaurants Ltd.
Born in Maidstone, Dennis worked at Rick Stein’s bakery in Padstow for 2 ½ years and then went on to join The Seafood & Grill team in 2010. He proved himself to have potential as a cook so was asked to join Nathan’s apprenticeship scheme in conjunction with Cornwall College. When asked to describe Dennis, Nathan smiled and said, “Dennis is energetic, enthusiastic and highly vocal!” His passions are cooking, surfing, football and music. His life’s ambition is to be better today than he was yesterday.
Amelie – Front-of-house Supervisor, The Seafood & Grill Restaurant
Born in France, Amelie completed 4 years at catering college before working at the hotel Le Relais du Gue de Selle in France. She came to Cornwall in 2008 to work at L’Estuaire restaurant in Rock, joining the Seafood & Grill team in 2010. She is passionate about her job, especially the contact with customers and learning new skills. Nathan describes Amelie as, “Energetic, enthusiastic and full of beans!” During her time off she also enjoys singing. Her life’s ambition since she was 8 years old has been to open her own restaurant where she would relish working in either the kitchen or front of house.
